Tasting Notes

WINEMAKER NOTES
Pale Straw in colour. Fresh aromas of cut green grass, green apple and citrus. Flavours of  green apple, grassy, lemon and lime citrus followed by fresh acidity, light bodied with slightly waxy texture and honey-like characters through the  back palate.

VINEYARD
The majority of the fruit for 2017 Fiano came from Chalmers vineyard on the eastern side of the Mount Camel range in Colbinabbin, along with a small amount from our Tellurian vineyard where ancient rich, decomposed greenstone rock and limestone and soil depths up to 2m allow roots to reach deep, while relatively low fertility controls vigour and yield.

VINTAGE
Spring rainfall and cooler conditions of 2017 were ideal for flowering and fruit set. Warm gentle summer with no extreme heat days meant a slower ripening season with harvest a month later than 2016.

WINEMAKING
Grapes were whole bunch pressed to stainless steel and the juice allowed to settle overnight. Inoculated with a select strain on yeast, the wine remained in tank on lees for three months.
